Coho Restaurant was pleased to welcome Gilles Nicault, Long Shadows’ Director of Winemaking to Friday Harbor and Coho Restaurant for a winemaker’s dinner. Long Shadows was founded in 2003 by Allen Shoup, one of the founding fathers of Washington wine. Shoup spent 20 years building Chateau Ste. Michelle. His vision was to make the best wine possible in Washington. To realize his dream, Shoup brought together the finest winemaker’s in the world known for their expertise with a particular varietal. Shoup supplies the very best Washington fruit along with Long Shadow’s state of the art production and cellaring facility. The consulting winemaker is in and out throughout the growing season and harvest leaving Gilles responsible for the day-to-day monitoring of the fermentation and cellaring.

The Long Shadow’s project started with a team of seven winemakers producing Washington Riesling, Syrah, Cabernet Sauvignon, Merlot, Sangiovese, and a Bordeaux style blend.
