Chef Bill is on a roll! He had so much fun creating international foods for our Global Cuisine nights over the winter, it’s looking like he’s continuing the world foods on our summer menu.
Besides our Mediterranean inspired foods, he’s added a Curried Red Lentil Dahl with Spice-Roasted Eggplant and Cauliflower, Roasted Figs, and Grilled Flat Bread; Tempura Soft Shell Crab with Sautéed Local Chard, Haricots Verts, and Sweet Corn Coulis; Hamachi Poke (yellowtail salad) with Ponzu & Cilantro Dressing, Avocado, Cucumber, and Won Ton Chips.
What’s even more exciting are all the gluten free accompaniments he’s added: Chinese Mung Beans, Shiitake Mushroom & Kale Quinoa Cakes, Cannellini Bean Ragu, Wild Rice and Chick Pea Socca (YUM!); he’s doing a Wild Rice & Mushroom Risotto entrée as well.
The plates are lavish with seasonal vegetables, many of them local: kale, chard, shiitake, broccollini, summer squash, haricot verts, asparagus, sweet corn, red peppers, eggplant, cauliflower, fennel, and whatever the farmers bring in each day.
Vegans could take any of Chef Bills fabulous accompaniments, pile them with seasonal vegetables, and top with one of his sauces: Lemon & Extra Virgin Olive Oil Emulsion, Heirloom Tomato Salsa, Roasted Red Pepper & Garlic Coulis, Basil Aioli; that would make a delicious, satisfying meal.
Meat eaters will love the Rib Eye Steak with Mashed Potato, Wild Mushroom, Buttermilk Fried Onion Rings (oh yah!), Red Wine Demi Glace; or the Grilled Lamb Duo: Grilled Rack & T Bone, Lyonnaise Yukon Gold Potatoes, Caramelized Shallots, Red Wine Demi Glace. Bill prides himself on his technique, and our guests tell us he cooks meats “Perfectly!”
Seafood lovers have a real catch with the summer menu. Besides the yellowtail and crab, Bill has Grilled Octopus Poached and Marinated with Garlic & Ancho Chilies; Shrimp & Pistachio Encrusted Halibut; Wild Troll Caught King Salmon; and a Seafood Trio of Lobster, Shrimp, and Seared Scallops.
Then, of course, there’s the house made pasta; right now it’s Asparagus & Bacon Ravioli with Parmesan Reggiano, Roasted Red Peppers, Wild Mushrooms, and Garlic Cream Sauce.
